紅玉紅茶
紅玉紅茶,台茶18號,於民國 88 年(西元1999年)正式命名為紅玉。父系為台灣本土野生山茶B-607、母系為緬甸大葉種B-729,屬於大葉種。適合製作為紅茶。現在也有茶農試做紅玉『白茶』、紅玉『紅烏龍茶』。
在921大地震後,為了振興國內經濟,推行一鄉一特色,茶改場為了重振紅茶之鄉的美名,積極推廣紅茶,成為魚池鄉特色茶。其實台灣在日治時代就開始種植紅茶了唷。
香氣與口感
紅玉紅茶:薄荷香、肉桂香氣、涼性感明顯。適合冷泡熱泡。或是依照自己喜歡的方式沖泡紅茶,之後再依茶性調整沖泡。
茶湯水色金紅鮮明,茶香帶有濃濃肉桂味、薄荷味、些許柑橘、清涼感,葉底有點甜香。茶湯口感滑順、濃郁、香氣飽滿。
紅玉紅茶的品種香氣明顯,特殊香氣有些人會覺得很像口腔清新劑、牙膏等。紅玉紅茶很適合搭配甜點一起食用,能增添風味。紅玉紅茶香氣明顯強烈,非常很適合單飲。
凝乳現象
高品質的紅茶,熱泡後的茶湯在冷卻後常會出現一層淺褐色或橙黃色的渾濁現象,此現象稱為「凝乳現象 」; 當溫度越低,凝乳現象就越明顯,速度越快,滋味也越濃烈,而這現象也是評鑑高品質紅茶的重要指標之一。不是茶湯變質喔!!!

Ruby Black Tea
Ruby Black Tea also called Red Jade or TTES No.18 (Ruby). It is a tea tree variety cultivated from Burmese and Taiwan wild tea trees and it is Large-leaf black tea. It is named Ruby tea because of the bright red tea soup. Ruby tea is rich in flavor with aromas of cinnamon and mint, which is the best black tea variety.
Taiwanese black tea was first cultivated by the Japanese in 1903. The first Assam variety was introduced in 1926, planted around the hills of Sun Moon Lake in Nantou County. The climate, environment and terroir of this lake were considered to be the most similar to the tea gardens of Assam in India. Today, Sun Moon Lake produces most of Taiwan's black tea. One of the most famous of these is Ruby Black, which has an absolutely oriental flavour.
After big earthquake hit Taiwan in 1999, the government would like to boost domestic economy and promote black tea, black tea became popular in Yuchi, Nantou (Sun Moon Lake Area)
